cucumber and carrot

I wish I would have thought about taking a picture of the carrot before I sliced it up so that you could see what a real carrot looks like. It’s lumpy, bulbous and covered in dirt. The carrot I used for this salad was probably just under two inches in diameter. Anyway, I’ll explain the [...]

chili and rice

1 can chili con carne with beans
1/4 cup diced tomato
1/4 cup diced onion
2 cups cooked rice
cumin
garlic powder
onion powder
3 tablespoons sour cream

The purpose of this meal is to learn how to make do with little and at the same time learn how to stretch what you do have. I could have very easily used a whole [...]

Keld’s Christmas hors d’oeuvres

1 package dehydrated sun-dried tomatoes
pear juice (or any kind of juice, wine or water)
2 cloves garlic
2-3 tbsp olive oil
salt and pepper
sliced onion (we did it raw, but I would try [...]

1 green bell pepper
2 cups cooked rice
2 tablespoons butter
chili powder
cumin
onion powder
garlic powder
cayenne
salt
black pepper
honey
basil
a few ounces of canned tomato sauce

The secret to making this good is: don’t be [...]

awkward hour squid

I had the pleasure of cooking for a live audience this last Saturday. I had a lot of fun and we had some guests who were watching the web-cast come and join us in the end. Three items were prepared so I will try and keep the commentary short and let the rest speak for [...]

lentil soup

Christmas eve I had some friends over and took this opportunity to make some lentil soup that I had heard about from The Amatuer Gourmet. This recipe was perfect because I had exactly two cups of lentils left that I probably wasn’t going to get around to cooking later.
I also had some steaks that I [...]
