Pulled barbecue chicken

This is a really easy recipe, and despite the name, requires no actual barbecuing or grilling. Chicken leg quarters were 79¢ a pound at the store, so this seemed like a good option.

poor man’s mashed taters

Mashed potatoes without butter (poor man’s mashed taters)

3 russet potatoes
4 garlic cloves
bay leaves
sprig of thyme
vegetable stock
salt
black pepper

Creamy turkey soup

Made this from leftover turkey. I know that this is more of an after-Thanksgiving type of recipe, but I had an extra turkey in the freezer that I cooked.  Soup is a great way to use up leftovers and thing you would usually throw away. Also works well with a couple of picked-over chickens.

spaghetti and brats

I had an extra packet of mac ‘n’ cheese sauce mix lying around. Amazingly, this was made from stuff we had in the fridge.

1 lb of spaghetti
1 lb bratwurst, sliced into 1 inch pieces
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, minced or 1 tbsp garlic powder
2 tbsp olive oil

1 can black beans, drained and rinsed
1/2 onion, minced
1/2 green pepper, minced
2 cloves garlic, minced
salt and pepper
dash cumin and cayenne pepper
1 c bread crumbs
2 eggs, beaten
thin sourdough baguette slices, toasted
diced tomato

brown mustard

simple cucumber salad

2 cucumbers, sliced thin
1 small or 1/2 large red onion, cut in half and sliced thin
1 tbsp kosher salt
3 tbsp white wine vinegar
2 tsp dried or 1 tbsp fresh dill weed
